I am so excited to finally share with you all, my favorite Sylvie Roy super delicious quick and easy gluten free coconut pecans bars recipe, I make every single week. These delicious bars are perfect with tea or coffee in the morning or as an afternoon snack when you are in the mood for something sweet. They are gluten, grain and dairy free, and with all natural and pure ingredients. So here we go! :)
You will need:
8" square baking dish
1 tsp of coconut oil to grease the dish
1/2 tsp vanilla extract
1 medium to large banana
1/4 cup of pure maple syrup (or honey)
1/3 cup of coconut flour
3 tbsp of full fat coconut milk (canned)
1/2 cup of full fat & unsweetened coconut flakes
1/2 cup chopped pecans
Start by meshing the banana with a fork, then in a separate medium size bowl whisk the 2 eggs, add the vanilla and the maple syrup and then add the meshed banana, mix well. Then start by adding the coconut flour to the mix gradually as you're mixing it. Add the coconut milk and finally the coconut flakes. Set your oven to 350 degrees, grease the pan with coconut oil and then place the batter into the pan smoothing it with your hands until it is evenly distributed. Sprinkle the pecans covering the top. Bake for 20 minutes.
